Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup diced fresh rhubarb
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla powder
  • 1/2 tsp cinnamon optional

Method
 

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together flour, both sugars, baking powder, baking soda, salt, and cinnamon.
  3. Gently fold in diced rhubarb until evenly distributed.
  4. In another bowl, beat egg, then whisk in milk, oil, and vanilla.
  5. Pour wet ingredients into dry ingredients and stir just until combined.
  6. Divide batter evenly among muffin cups, filling each about 2/3 full.
  7. Bake for 18-22 minutes until a toothpick comes out clean. Cool for 5 minutes before transferring.

Notes

For extra sweetness, sprinkle tops with coarse sugar before baking. Store in airtight container for up to 3 days or freeze for longer storage.
