- Cook rice according to package instructions. For extra flavor, use chicken broth instead of water.
- Season chicken with chili powder, cumin, garlic powder, salt, and pepper.
- Heat olive oil in skillet over medium-high heat. Cook chicken 6-7 minutes per side until fully cooked. Let rest 5 minutes before slicing.
- Prepare toppings: dice bell pepper, slice avocado, drain black beans, and warm corn if using frozen.
- Assemble bowls: divide rice among four bowls. Top with chicken, beans, corn, bell pepper, and avocado. Squeeze lime juice over each bowl and garnish with cilantro.
Notes
