Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 1 cup uncooked rice white or brown
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 1 avocado sliced
  • 1 lime juiced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • salt and pepper to taste
  • fresh cilantro for garnish

Method
 

  1. Cook rice according to package instructions. For extra flavor, use chicken broth instead of water.
  2. Season chicken with chili powder, cumin, garlic powder, salt, and pepper.
  3. Heat olive oil in skillet over medium-high heat. Cook chicken 6-7 minutes per side until fully cooked. Let rest 5 minutes before slicing.
  4. Prepare toppings: dice bell pepper, slice avocado, drain black beans, and warm corn if using frozen.
  5. Assemble bowls: divide rice among four bowls. Top with chicken, beans, corn, bell pepper, and avocado. Squeeze lime juice over each bowl and garnish with cilantro.

Notes

Store components separately for meal prep. Add other toppings like cheese, sour cream, or salsa as desired. For vegetarian version, substitute chicken with extra beans or tofu.
